This week’s treat is one of my weekend breakfast go-tos and kicks off Hispanic Heritage month. There are many reiterations of huevos rancheros, with some adding refried beans, avocados, and even shredded meat. This one is a very simple and quick recipe. If you don’t have corn tortillas in your fridge and need an even quicker recipe, you can substitute corn tortillas for tortilla chips.
Both queso fresco and cotija cheese can be found at Wegmans, as well as the Mexican crema. Cotija is my go-to cheese as it’s saltier than queso fresco. Cotija cheese is usually the cheese you see on elotes, another Mexican staple. If you’ve never had Mexican crema, it’s similar to sour cream, but is lightly salted and a thinner constituency that allows you to easily drizzle on top of tacos, enchiladas, and more. Enjoy!
