This week’s Townhouse Treat is slightly more involved, which might be the perfect recipe to make in your family’s stocked kitchen if you’re going home for break. This week's treat is pumpkin chocolate chip cookies! If you don’t have an electric mixer, not to panic–you can use a regular whisk, it just might take a little more elbow grease. After you mix everything together, the batter my feel stickier than usual. Just trust the process. These cookies are a little more on the cakey side compared to your typical Toll House chocolate chip cookie, and the first time I baked these, I was a little concerned before putting them in the oven. These are one of the only cakier types of cookies I like, so I hope these can be a new addition to your seasonal rotation.
Since canned pumpkin puree usually comes with more than a cup, you can throw the extra with your overnight oats or make into a cold foam to use up the rest. Or make two batches of cookies. Whichever best fits your prerogative. Enjoy before your roommates or family eats the rest.
