Details

Adrienne Bitar is a lecturer of food studies in the Program in American Studies at Cornell University and the author of Diet and the Disease of Civilization (Rutgers UP, 2018).  In this talk, she will situate the current push to end animal agriculture and develop alternative proteins in the storied American history of meatless meat. From John Harvey Kellogg to Herbert Hoover, Americans have long been invested in creating meat without animals for far different reasons and to far different ends. Using primary sources, Bitar will illustrate the cultural history of both meat and meatless meat, and the many challenges we have faced to incorporate meatless meat into the American diet.
